For the dressing:
  • 1cup walnuts
  • 3/4cup water
  • 3Tbsp soy sauce
  • 1/4cup lemon juice
  • 1 or 2cloves garlic
  • 2 pitted dates
For the salad:
  • 4cups kale, destemmed
  • 4 medium beets, cooked and sliced(I used roasted beets, but you can also use canned beets)
  • 1/2cup dried cranberries(unsweetened preferably)
  • 1/3cup sunflower seeds, raw
  • 1/3cup walnuts(optional, as a topping)
  1. Put all ingredients for the dressing in a high-speed blender and blend until smooth. Set aside.
  2. Cut the kale into bite-size pieces and place in a mixing bowl.
  3. Pour the dressing on the kale and toss.
  4. Place the kale into serving bowls, then add the beet slices, dried cranberries and sunflower seeds. Top with whole walnuts, if using.
