When I came up with this winter kale salad recipe, I wondered what made it… wintery. It’s the name that immediately popped up in my head, so I had made the association. Then I figured it out: it’s the beets and the cranberries that make this salad perfect for the early winter.

Speaking of early winter, today was our first snowfall in Montreal. It’s pretty late in the season, and we’ve had amazing weather so far. Yesterday, I went for a short hike with my boyfriend and the dogs, and it was warm enough to wear a t-shirt. But it’s all gone, as I watch wet snow cover the lawn under grey, heavy skies. Sigh…

But let’s get back to this amazing salad!

Don’t get me wrong. You’ll love the taste of this easy kale salad and its creamy walnut dressing. However, the dressing plays a big part in making sure you get all the health benefits of eating kale.

Are you a fan of oil-free or fat-free salad dressing? If so, it needs to stop right now. To absorb some of the healthy nutrients from leafy vegetables such as kale, your body needs a little fat. That’s because these nutrients are fat-soluble. Here’s a great video from Dr. Greger, author of my absolute favorite book How Not to Die, on the topic of fatty vs fat-free dressing:

If you insist on using a fat-free dressing, make sure you throw a few walnuts or some avocado into your salad.

But I insist, you’ll love this dressing! It’s lighter than a typical creamy dressing, and packed with flavor. A good blender will help blend the walnuts into a smooth dressing. This is where my Vitamix comes in handy! That machine doesn’t get a break in this house…

I’m beating the winter blues with this winter kale salad… and colors!

Ingredients
For the dressing:
  • 1 cup walnuts
  • 3/4 cup water
  • 3 Tbsp soy sauce
  • 1/4 cup lemon juice
  • 1 or 2 cloves garlic
  • 2 pitted dates
For the salad:
  • 4 cups kale, destemmed
  • 4 medium beets, cooked and sliced (I used roasted beets, but you can also use canned beets)
  • 1/2 cup dried cranberries (unsweetened preferably)
  • 1/3 cup sunflower seeds, raw
  • 1/3 cup walnuts (optional, as a topping)

Ingredients
For the dressing:
  • 1 cup walnuts
  • 3/4 cup water

  • 1/3 cup walnuts (optional, as a topping)
Instructions
  1. Put all ingredients for the dressing in a high-speed blender and blend until smooth. Set aside.
  2. Cut the kale into bite-size pieces and place in a mixing bowl.
  3. Pour the dressing on the kale and toss.
  4. Place the kale into serving bowls, then add the beet slices, dried cranberries and sunflower seeds. Top with whole walnuts, if using.
