  • 4Tbsp soy sauce(or tamari if making gluten free)
  • 3Tbsp orange juice
  • 1/4tsp sesame oil
  • 1inch piece fresh ginger, grated
  • 1/2bloc firm tofu
  • 1tsp vegetable oil
  • 1head broccoli
  • 1medium eggplant
  • 2cups brussel sprouts
  • 1medium orange
  • 1/4cup vegetable broth
  • 1Tbsp black sesame seeds(optional, as a topping)
  1. In a small bowl, mix together the soy sauce, orange juice, sesame oil and grated ginger.
  2. Cut the tofu in cubes, place in a freezer bag or container and pour the marinade in. Close the bag or container and flip around a few times to mix the tofu and the marinade. Place in the fridge for 2 hours.
  3. Cut the vegetables and the orange in large, bite-size pieces.
  4. In a large pot over medium-high heat, warm the vegetable oil.
  5. Remove the tofu from the marinade and cook in the pot until brown. Keep the remaining marinade aside.
  6. Add the broccoli, eggplant and brussel sprouts to the pot, as well as the vegetable broth. Cover and let cook for 6 min.
  7. Add the leftover marinade and the oranges to the pot. Cook for another 2 min.
  8. Remove from heat, transfer in bowls and sprinkle with sesame seeds before serving (optional).
Recipe Notes

Don’t know what to do with the other half of your tofu block? Keep it in the fridge, in a container filled with water, for up to a week. Make sure to change the water daily.
