Easy healthy pasta recipe
creamy avocado sauce
(preferably multigrain or whole wheat)
(drained and rinsed)
salt and pepper to taste
Prepare the creamy avocado sauce. Set aside.
In a large pot, cook the pasta according to instructions.
While the pasta is cooking, use a spiralizer to cut the zucchinis into long noodles.
Once the pasta is cooked, drain the water and return the pasta to the pot.
Add the avocado sauce, zoodles, tomatoes and lentils to the pot and mix together. Add the nutritional yeast if using, and adjust seasoning (salt and pepper) to taste.
