My new favorite easy healthy pasta recipe with a creamy avocado sauce… Yum!
Everyone knows how to make pasta, but it’s not that easy to find an easy healthy pasta recipe you can still throw together quickly while being assured that you can enjoy a balanced vegan meal.
An easy healthy pasta recipe that goes easy on the pasta…
I love pasta, and I tend to make myself very large portions that are just loaded with carbs. Over time, I have switched from white pasta to multigrain or whole wheat pasta, which are both healthier, but even healthy pasta in large quantities is not good for you.
So I present the solution to large plates of pasta: zoodles!
Zoodles are zucchini noodles, made using an uncooked zucchini and a spiralizer. Every time I make myself pasta, I half the quantity of pasta and incorporate zoodles. I never found an entire plate of zoodles to be very satisfying, but when mixed with pasta, it makes for a winning combination.
Try it, it will change your relationship with pasta, especially if you felt guilty eating it. As a bonus, you also know you are getting an extra dose of veggies. Win win!
A spiralizer is an inexpensive kitchen item to purchase, as you don’t need a very fancy model to make yourself zoodles every now and then. I use a model similar to the black one below, and it does a great job!

Ever been to a restaurant where the only vegan meal you could eat was pasta with tomato sauce? Did you feel satisfied after dinner? I think not. That’s because vegan balanced meals need to contain vegetables, grains and protein. Back when I was an omnivore, I would more often than not plan my meals around a piece of meat or fish. Grains and veggies were an afterthought (and sometimes I even completely forgot about including grains, and found myself hungry after a few hours).
As a vegan, I plan my meals differently. I make sure I get lots of vegetables, a portion of grains, and enough plant-based protein to feel full. The grains are easily covered in this pasta dish, but it’s the extra veggies and lentils that make it a balanced vegan meal.
